Product Review: King Arthur Flour Gluten Free Pizza Crust Mix
Be prepared for some work...
If you haven't found a frozen pizza you like yet, and are still wanting to make your own pizza crust, may I suggest King Arthur Flour Gluten Free Pizza Crust Mix.
In the interest of all things gluten free, I had to try making it myself JUST ONCE. I've never made my own pizza dough, and figured who's mix was better than the people who have made flour for years? Be advised: this dough takes some work and planning ahead. You will need to let it rise twice - both 30 minutes each - then parbake for 8-12 minutes before adding your toppings and finishing it off.
Now, the box says you can make one 14" thick crust pizza, or two smaller pizzas. I decided to go for the 14" thick crust, since that's my favorite. I don't think the pizza was supposed to come out THIS THICK. It was about 3 inches tall, and that's a thick crust! It looked more like a bread topped with pizza toppings when it was done. That said, the crust wasn't bad in flavor or texture - it came out just right: chewy and dense. There was just too much of it. So I HIGHLY recommend splitting the dough in half and creating two pizzas.
We had made ours half and half, so my husband could put meats on his half and mine could be a veggie pizza. The bottom of the crust came out crisp, and the interior chewy and breadlike. The flavor wasn't overpowering, so the ingredients that shined were the toppings.
King Arthur makes a complete line of gluten free mixes now, including cookies, bread, brownies, all purpose flour, pancakes, muffins, and cake. Find more information at www.kingarthurflour.com and create some of your own masterpieces!
